Green Leaves Early Learning Bellerive have been using kale and fresh herbs in their cooking straight from their veggie garden. This superfood Kale and Spinach superfood pesto recipe is one of their many versatile and delicious recipes. This superfood can be stirred through hot pasta, spread onto fresh bread, add with cheese and crackers, use as a salad dressing, added to grilled fish or chicken….. the choices are endless! It’s one of the most versatile condiments and a great way to include a variety of greens in our children’s diet.
Ingredients
85g sunflower seeds (you can also use pine nuts or even walnuts if you prefer)
100g parmesan cheese, grated/shaved
3 cloves of garlic
75ml olive oil
75ml vegetable oil
1 cup firmly packed baby spinach
1 cup firmly packed kale
1/3 cup Parsley
2 tbsp Lemon juice
Salt and pepper to taste
Method
- Place all the ingredients except the oil in a food processor and blitz on high, gradually add the oil in a steady stream.
- Pause to scrape the sides of the bowl if needed.
- Adjust the seasoning to taste.
- Just add to your favourite dish!
