The children at Green Leaves Oceanside have been learning about transportation. To extend their interest in all things involving wheels, roads, and motion, Chef Alex led a culinary class revolving around transportation, which involved making delicious shortbread! The children were thrilled to roll the dough into thin layers and discussed how rollers do the same to create the roads we drive on! They then used circular cookie cutters to make wheel-shaped cookies.
These cookies are a buttery delight! We hope you’ll enjoy them as much as we did.
Ingredients:
1 cup of butter (or Nuttlex for a dairy-free option) – softened
1 teaspoon of sea salt flakes
2/3 cup of icing sugar
2 cups of plain flour
1.5 teaspoons of good-quality vanilla essence
1/2 cup of unsweetened cocoa powder*
Superfine sugar**
Optional
* Omit if you prefer the classic version
** Sprinkle superfine sugar over the shortbread after baking,
Method:
1. Preheat oven to 175 degrees
2. Combine ingredients – making sure butter is very soft prior. Mix well using hands or mixer.
3. Press dough flat onto a baking tray that is lined with baking paper. Cut into different shapes with cookie cutters of your choice.
4. Bake until golden in colour.
Take out of the oven and sprinkle with fine sugar if preferred.
