The children at Green Leaves Early Learning Ashgrove recently enjoyed a tasty twist on the classic sausage roll combined with the quintessential Australian condiment of choice, Vegemite. The Vegemite Sausage Rolls were crispy, flavourful, and packed with vegetables, which gave it the perfect texture. They’re simple to create at home and they’re especially great in lunchboxes for siblings (and perhaps even grown-ups!).
Ingredients:
500g chicken mince
125g corn kernels, drained and thoroughly chopped
1 medium zucchini, grated and liquid squeezed out
1 small carrot, grated
2/3 cup grated cheddar cheese, grated
1/3 cup panko breadcrumbs
1 ½ tablespoons Vegemite
1 clove of garlic
3 sheets of frozen puff pastry
1 egg, lightly beaten
Sesame seeds, to sprinkle
Method:
- Preheat oven to 185 degrees
- Place chicken mince, corn kernels, carrot, zucchini, cheese, breadcrumbs and garlic in a bowl. Add Vegemite, season with pepper and mix well to combine.
- Place one pastry sheet on a flat surface. Spoon 1/3 cup of mince mixture along the long side of the pastry sheet. Roll up from the long side to form a log. Cut into four equal pieces. Repeat with the remaining pastry.
- Brush the sausage rolls with egg wash and sprinkle with sesame seeds. Line a baking tray with baking paper and pop the sausage rolls in the oven for 20 minutes or until golden and cooked through.
- Stand for 5 minutes and serve with your condiments of choice.
