This is a very popular recipe amongst families at Green Leaves Carindale. Oats are an excellent source of plant-based protein, rich in antioxidants and full of fibre. Combining the oats and pepitas with a few chewy sweet bursts of dried fruit makes for a tasty bar.

Ingredients:
200g rolled oats
30g pepitas (sunflower seeds)
25g coconut
40g dates
70g dried apricots
30g dried cranberries
60g coconut oil (melted)
45g rice malt syrup
45g maple syrup

Method:
1. Preheat oven to 180c
2. Combine all dry ingredients, add coconut oil and syrups. Stir to combine.
3. Press firmly onto a baking tray and bake for 25 to 30 minutes.
4. Set aside to cool before slicing.
