Recipe: Apple and Banana Bliss Balls
The perfect, healthy, no-bake snack does exist! These apple and banana bliss balls are popular at Green Leaves. They’re simple to prepare ahead of time – perfect for snacks on the go, or lunch boxes. Plus, they are dairy-free and nut-free, so they’re versatile and great for sharing too.
Ingredients:
1 cup of rolled oats
¾ cup of desiccated coconut
2 cups of medjool dates, soaked in hot water for 30min
1 banana
400g can of pie apple
1 cup of shredded coconut for rolling
Method:
1. After soaking dates, drain most of water. Using a food processor, blend until smooth.
2. Add the banana and apple, continue blending to smooth paste.
3. Combine wet ingredients with the rolled oats and shredded coconut. If the mixture is a little dry, you can adjust its consistency with water. If it’s a little wet, add some of the shredded coconut.
4. Lastly, roll mixture into balls and cover them in shredded coconut and store in fridge.
The bliss balls will keep for up to 7 days in an airtight container and freeze well – separate any layers with baking paper to avoid them sticking together. If you prefer, they can be rolled into logs.
