Recipe: Weetbix Slice

Slice is one of the simplest and most delicious treats. Green Leaves Early Learning Oceanside recently shared their favourite slice recipe, which has been very popular with the children. This timeless recipe is great for the freezer, too, if you have leftovers. We hope you will enjoy it as much as we do!

Ingredients

3 Weetbix (crushed)
1 ½ cups of self-raising flour
1 cup desiccated coconut
125g butter (melted)
¾ cups rapadura sugar (or soft brown sugar)

Icing
¾ cups of icing sugar
2 tablespoons of cacao powder
50g butter
2 tablespoons hot water

Method

  1. Grease and line a slice tray with baking paper
  2. Mix dry ingredients and combined with melted butter
  3. Press into slice tray and bake at 180 degrees for 20 to 25 minutes
  4. For the icing, melt butter and add to blended icing sugar and cacao powder. Mix well and gradually add the hot water. Mix well and pour over slice, and spread evenly
  5. Refrigerate until set.
