Recipe: Pavlova Rocky Road
When two classic desserts combine, it makes for a very tasty Pavlova Rocky Road! This delicious and creative treat marries fluffy meringues with the gooey crunch of marshmallows and biscuits. Enjoy!
Ingredients:
2 blocks of white chocolate – 360g
½ cup white marshmallows – ½ cup, chopped
75g dried mango – chopped
90g Scotch fingers – chopped
40g meringue kisses – chopped
2 – 3 passionfruit – scoop out the pulp
Method:
- Melt white chocolate in 20-second intervals in the microwave, stirring between each interval.
- Add all chopped dry ingredients to melted chocolate, and stir to combine.
- Press mix into a greased and lined slice tray.
- Top with fresh passionfruit pulp, refrigerate for at least 2 hours before slicing and serving.
